This is the Emerson Carver.
I like it a lot. Let me tell you why.
I really like the blade shape of a classic carving knife. It’s got almost a saber style blade that is perfect for almost any carving task you would ever encounter in a kitchen. And it’s meant for meat and in my family, we are definitely carnivores so our Carver gets used a lot.
Secondly, the Emerson Carver is shorter – by a number of inches than any other classic or store-bought carving knife that I’ve ever owned. They are simply too long. Our carver is “just right” at 11 inches overall with a 6-inch blade. I have found that it is the perfect size for every task I’ve put the edge to. It carves beautifully. It’s easy to handle. It’s a perfect addition to any camp or kitchen. And it’s a damned handsome knife.
The USA made Buffalo Hide Leather Sheath is included with each Carver. Please note, each sheath will differ due to being a natural material. There may be slight differences in color or natural marks in the leather.

When Emerson released the carver, I knew I had to get one. To me it screams a woods knife, which is exactly what i have used it for since getting it a couple weeks ago. I have batoned, carved a roast beef, and made feather sticks with it and it excelled at all of it. I highly recommend this to anyone looking for a new kitchen or a new camping blade.

I was surprised how large the Carver was in person. This knife is not for the feint of heart! The heft along with the balance and gravity really aid in cutting just about anything. Our family fights over who's going to get to do the carving whenever we have a roast. I'm really impressed with the latest offerings from EKI, especially with those available with the Richlite handles. Can't wait for more knives like this.

The Carver is hands down the best carving knife for slicing through a thick cut of meat in existence. I used it within 10 min of it arriving – now my wife won’t put it down. Didn’t think I’d see an Emerson knife like this one but sure glad they made it.
The new handle material – eightieth – and the sheath are both top notch – well done Team Emerson!
